Natural wine marks a departure from excessive industrialization, and a return to tradition and the natural processes our ancestors relied on. It is a philosophy, not a black & white distinction. Some wines are made more naturally than others, but the following commonly accepted guidelines in the natural wine world, are considered the “pillars” of this philosophy:
- Organic or biodynamic farming
- Manual harvest
- Wild fermentation (alcoholic fermentation carried out by the local environment’s native yeast)
- No blocked malolactic fermentation
- No use of additives
- No filtration or clarification
- Zero to limited added sulfites
